Vegan Quinoa Chili
This recipe is protein packed, and is great meal prep recipe for the start of the week tasting better and better as the days go on ;)
1 brown onion roughly diced
2 med sweet potato’s, diced.
2-3 cups of organic vegetable stock
1 can organic diced tomato’s
1 cup of quinoa (rinsed)
1 can of organic kidney beans
1 can of organic black beans
1 can of corn
1 tsp salt
1 tsp garlic powder
1/2 tsp of pepper
3 tsp chili powder (dependent on your chilli tolerance!)
3tsp of cumin
Optional to serve:
Fresh coriander, greek/coconut yogurt, avocado, corn tortillas, cheese.
Sauté onion in oil until transparent.
Add diced potato, all of the spices and cover for a few minutes.
Add stock and bring to a boil
Adding the beans, corn, quinoa, cinnamon stick and simmer for about 30 minutes or until potato is soft.
